"Nouveau" American makers work to highlight the intense flavors of each batch. Many of them use only cacao beans and sugar (often no vanilla, little or no added cacao butter, etc.) This less forgiving approach, when done properly, can produce exquisite flavors.

We have been excited to see the rise of excellent "in country" makers arising in regions that grow high quality cacao. Making chocolate "in country" tends to reduce the length of the supply chain and create greater economic opportunities.
