Colin was only 21 when he heard the call of chocolate. He still makes every batch by hand. A stickler for purity, Colin uses only two ingredients in his bars: cacao beans and sugar. Without using cocoa butter, Colin successfully makes bars that rival his European counterparts with respect to mouth feel while packing the punch of flavorful American-style chocolate.

Rogue’s Silvestre is a true dark chocolate lover’s dream come true. Heirloom feral cacao, crafted into a two ingredient bar, but with smoothness and a mouthfeel comparable to the European, added cocoa butter style. The Garagistas enjoyed all of Batch #4, and Batch #7, which was the first batch made using the new process that allows Colin to achieve smoother texture, among other things.

Rogue Chocolatier partnered with The Chocolate Garage to release Batch #1 of the Piura. This bar is loved by a passionate contingent. Rogue Chocolatier was the first chocolate maker to source cacao from Juan Tirado’s farm in Peru less than a couple of years ago. Peru has since become part of most craft chocolate makers line up.

Carefully fermented and slow dried, Colin Gasko of Rogue has spent a decade searching for beans like these. His excitement was infectious when we first spoke about crowd funding this bar through our Future Chocolate program back in July 2013. Colin sent us the first Jamaica 75% samples in December of 2013 and has been continually working towards pulling out the best flavors of this cacao for batch #2.

The first Rogue bar with a modern package design, the first American bar from Jamaica for The Chocolate Garage, and the first bar funded entirely by our Future Chocolate program. We are delighted to be helping Rogue and other makers and growers break new ground by connecting our community to these outstanding craftsmen and women.
