Founder: Alan 'Patric' McClure
Location: Columbia, MO
Sources of cacao: All over the world
Characteristic: As masterful with single origin beans as he is with red curry and habanero
Inspired by a year living in France and experiencing the French chocolate tradition first-hand, Alan founded Patric Chocolate. Alan’s style is a true fusion of American and European style, adding just a bit of cocoa butter so he can stay true to the flavor forward, signature American style.
Beans from: Ghana
Tasting notes: lemongrass, ginger, creamy
First, bring the square of chocolate to your nose and smell the Lemongrass. And the warm ginger. Next, place it on your tongue, and feel the decadent creaminess of this dark milk chocolate, as it melts and the ginger begins exploding and nipping at your tongue. Repeat.
Beans from: Madagascar
Tasting notes: bright fruits, salt and citrussy habanero heat
This one you have to break the fine chocolate rule and chew. Once you chew, the blend of the 67% perfectly crafted Patric Chocolate and the habanero sea salt, catapults you into a happy, spicy and warm place, marveling at the tasting adventure this bar has provided. My current obsession and enthusiastically proclaimed GENIUS BAR!
Beans from: Piura, Peru
Tasting notes: grapefruit, toasted almonds, raisins
The bright berries, grapefruit and fruit bomb nature of this bar will rock your world. How can it be so fruity? There have to be raisins and other berries added to this bar, right? No. Seriously. This is 'just' carefully processed beans, then masterfully handled by Alan “Patric” McClure resulting in a standing ovation from chocolate reviewers and novices alike.
Beans from: Blend with Rio Caribe nibs
Tasting notes: caramel, salt & crunch
Alan ‘Patric’ McClure once again demonstrates his mastery of taste combinations with this special edition bar. Taste it and you'll swear there's some caramel hiding in the ingredients, but you'll be wrong. This bar contains only cacao beans, sugar, and milk powder. The more we work with makers like Alan the more we learn about the tremendous range and complexity of flavors hidden in those unassuming cacao beans.
Beans from: Rio Caribe, Venezuela
Tasting notes: mousse au chocolat with crunch!
This cacao comes from a single grower on Venezuela's Paria peninsula. It has robust and deeply satisfying chocolate flavor with notes of fresh cream, roasted almonds, coffee, walnuts, floral notes and subtle hints of dried apricot.
